Thinking about a Christmas Ham now...

I woke up this morning and suddenly realised that now would be a good time to start thinking about curing some ham for Christmas. Actually I would normally have started curing one already, after all a whole leg can take around 4 weeks to cure and possibly a bit more if it's to mature a bit before cooking. With all the stuff that's going on around here at the moment, I'm not sure I'm going to be able to do a "bone in" leg any time soon. I want to order one from a good producer and not just use...

This premixed and ready to use molasses dry cure can be used to cure any meat to make a slightly sweeter bacon or ham type product. Now shipping via DPD

We are pleased to announce shipping to all UK mainland* and some overseas destinations will now be undertaken by DPD on orders of 2KG and over. This means you get a 1 hour window for your delivery given to you in advance by text or email. Although this has meant a small increase in the cost of carriage, we believe this will benefit the customer greatly in terms of delivery speed and reliability compared to our previous courier arrangement. Parma Ham Cure

OK, just a heads up here. The Italians have objected to our usage of the words "Parma Ham Style Cure" as apparently it contravenes their PDO status, despite the fact that we're not selling the ham itself but a cure that allows you to make a similar product. We have therefore re-named it as "Prosciutto (Italian Style Air-Dried Ham) Cure" in order to comply with their complaint. Please rest assured that the curing product has not changed at all and you can still get it HERE
