Cure #2 (Prague Powder Number Two) - Instacure #2
This is Cure #2, also known as Prague Powder Number Two or Instacure #2 a mixture of kosher sea salt (89%), Sodium Nitrite (6.25%) and Potassium Nitrate (4.75%).
Cure #2 is should only be used to make air dried meats that will be eaten RAW, like Salami, Prosciutto etc.
Often referred to as PINK salt, our Prague powders only contain NATURAL colourings and NO anti-caking agents.
This cure MUST be weighed accurately (Scales measuring 0.1g recommended) and used according to any recipe that specifies Cure #2 or Prague Powder Number Two, usually 2.5g per KG of meat.
Sodium Nitrite and Potassium Nitrate are TOXIC if too much is used however they are safe and effective curing agents if used correctly and this product MUST be mixed with additional salt.
